Rahul Khurana, one of the partners of Gazal Caterers, said that both non-vegetarian and vegetarian specialties from different parts of India will be prepared. He said that 15 cooks will be preparing South Indian food, 20 will be preparing North Indian food, 25 will be preparing sweets and desserts, while 25 specialize in breads and 20 specialize in non vegetarian cooking.

Gazal Caterers own a number of machines to deal with time-consuming kitchen chores. For instance, they have a vegetable cutter that can cut 500kgs of vegetables within just 1 hour, a chapatti maker that can roll 2000 chapatis in one hour, two rice steams that can cook 240kgs of rice in 20 minutes. A separate section of the kitchen is devoted to tandoori rotis.

According to Khurana, the meals will be simple, but holistic. Large quantities of sprouts, salads, curds, papads, baked pulses, and others are served at the table. The vegetarian platter comprises basmati rice, pulau, bhajis, curries, and others. Dal will be served regularly with sambhar and rasam. A non vegetarian dish will be served with each meal. Lunch will be followed by dessert while dinner will be followed by a serving of dessert plus an ice cream.

Further, he said that Gazal Caterers are experts in crisis management. Citing an example, he said that they had been asked to serve food for 1000 people yesterday, but 2000 people could have their food without any problem.

Gazal Caterers have prepared food at the National Games in Guwahati and Jharkhand.

A national food festival on Karavali Utsav Ground will also form part of the event from Thursday to Sunday.
