Kerala Food Festival at Hotel Prestige

Hotel Prestige Mangalore, June 24, 2011: Hotel Prestige situated at Collector’s Gate, Balmatta in the city is hosting Kerala Food Festival from 22nd June to 26th June 2011. The festival will feature traditional ‘Nadan’ cuisine, which is the delicious country cuisine of Kerala. To ensure an authentic preparation, the hotel has invited Celebrity Chef Latha K. of Calicut who, along with her team of four members, will preside over the kitchen during the festival.

The festival, which will be hosted at Déjà Vu Family Restaurant every evening 7:00 p.m. onwards, will feature a buffet spread of typical vegetarian and non-vegetarian Nadan delicacies. Adult guests will be charged at Rs. 349/- per head for the buffet, while children from 6 years to 12 years will be allowed entry for Rs. 199/- per head. 

Our Celebrity Chef Latha K. – A Master of Taste
Hotel Prestige has specially invited Celebrity Chef Latha K. of Calicut, who is one of the most popular chefs of the state. Apart from Nadan, Kerala and other Indian cuisines, she is also an expert in Thai food. Latha is a rarity in the world of food, as hotel kitchens are traditionally dominated by men. But as she says, “Women have a natural flair for cooking. All the domestic cooking is done by women, so we know the exact quantity of ingredients required to get the right taste.”


Latha is a self taught chef whose only formal training has been at a six month course at the Food and Craft Institute at Kozhikode. A keen learner, she rapidly acquired the culinary skills while working in some of the best kitchens in the country. Famous personalities who have appreciated her preparations include film stars Mohanlal, Suresh Gopi and the film director Shaji Kailas. 


Country Cuisine – The Native Taste
It is said that country cuisine is the only true cuisine of the people. Just as we have country delicacies like Kori Rotti, Kori Sukka, Kottige and Moode, every culture has its own way of cooking. Typically country cuisine will have locally available ingredients, an earthy flavour and a preparation style that is typical to the particular region. “Traditional cuisines usually have tribal origins. No artificial flavour or additives are being used for items served at the food festival,” says the chef Latha.

As country cuisine would have evolved over the centuries, it will be well adapted to region’s weather and living conditions of the people. Food is a critical aspect of lifestyle and its importance is often underestimated.
